This is so simple to make, and there are lots of beetroots and carrots around at the moment.
1 beetroot
2-3 carrots
Parsley or coriander
Sunflower seeds
3 tbsp Cider vinegar or lemon juice or more

Grate the vegetables, chop the herbs finely, mix in the sunflower seeds, and pour the cider vinegar or lemon juice over. You can add in toasted sesame seeds as well.
