RAW COUSCOUS

1. Grind 1 head of cauliflower in a food processor or chop up very finely, so that it looks like couscous
2. Chop up some spring onions, 2 tomatoes, and a pepper very finely and mix with the cauli (you can use any combination of vegetables that you have at hand!)
3. Mash together
· 2 tbsp lemon juice or lime juice
· ¼ c chopped up fresh coriander or parsley
· 1 avocado
· 1 tsp chilli powder or a little fresh chilli
· 1 tbsp paprika
· 1 tsp salt
· ¼ c olive oil

Mix together well and serve. (I can eat a whole bowlful by myself) I have sometimes replaced half the cauli with broccoli, which is also delicious. Jane made this with piles of avocado and minced it up into a dip, which was brilliant. I have also made it with basil and olives, lots more tomato, and some fresh feta.
