ZUCCHINI NOODLES

There is such an abundance of zucchinis at the moment I was very excited when I served this up at our community meal and it was a hit with everyone.
5-6 zucchinis or 1 large overgrown one also works well – make more than you think you will use, as they are very moreish, and always disappear.
Olives (the more the better!)
Tomatoes
Red onions or spring onions or chives
Pesto
Oil – olive or hemp seed or something similar
Feta or blue vein cheese optional

 1. Using a vege peeler (or a spiraliser if you are lucky enough to have one) make a pile of "noodles". I leave the skins on as they add nice colour.

2. Chop up the tomatoes and red onions/spring onions, and mix everything together. That's it – easy as ...and delectable. And it uses up lots of that delicious vegetable that everyone is starting to get sick of at the moment! ENJOY
